This free meat temperature chart gives USDA's safe minimum internal temperature for any meat, poultry, fish, eggs or leftovers, in °F and °C.
Type your thermometer's reading, and it tells you if the food's safe or how far it has to go.
I built it because the numbers are easy to mix up, and a few degrees under is the difference that matters.
Here's the full chart, how to use it, and the mistakes to avoid.
Key takeaways
What is a meat temperature chart?
A meat temperature chart lists the lowest internal temperature each food has to reach to be safe to eat.
This one is USDA's, with a check for your own thermometer's reading.
The chart
These are the figures from USDA FSIS's Safe Minimum Internal Temperature Chart.
| Food | Safe minimum |
|---|---|
| Beef, pork, veal and lamb steaks, chops and roasts | 145°F (62.8°C), rest 3 minutes |
| Ground meats | 160°F (71.1°C) |
| Ground poultry | 165°F (73.9°C) |
| Fresh or smoked ham, uncooked | 145°F (62.8°C), rest 3 minutes |
| Fully cooked ham, reheated | 140°F (60°C) from USDA-inspected plants, others 165°F (73.9°C) |
| All poultry | 165°F (73.9°C) |
| Eggs | 160°F (71.1°C) |
| Fish and shellfish | 145°F (62.8°C) |
| Leftovers and casseroles | 165°F (73.9°C) |
A worked example
Here's the example the calculator loads: poultry, with the thermometer at 160°F.
Poultry's minimum is 165°F, so 160°F is 5 degrees under: keep cooking.
Mistakes to avoid
USDA notes that you can't see, smell or taste harmful bacteria, so the thermometer is the only sure check.
- Judging doneness by color
- Skipping the rest time on steaks, chops, roasts and fresh ham
- Taking food off the heat before checking it
