This free meat temperature chart gives USDA's safe minimum internal temperature for any meat, poultry, fish, eggs or leftovers, in °F and °C.

Type your thermometer's reading, and it tells you if the food's safe or how far it has to go.

I built it because the numbers are easy to mix up, and a few degrees under is the difference that matters.

A worked example

Here's the example the calculator loads: poultry, with the thermometer at 160°F.

Poultry's minimum is 165°F, so 160°F is 5 degrees under: keep cooking.

Mistakes to avoid

USDA notes that you can't see, smell or taste harmful bacteria, so the thermometer is the only sure check.

  • Judging doneness by color
  • Skipping the rest time on steaks, chops, roasts and fresh ham
  • Taking food off the heat before checking it
