This free oven temperature converter turns any oven setting into °F, °C, a fan oven's °C and a gas mark, at once.

It highlights the gas mark on a full table, so you can read a recipe from the US, the UK or Europe in your own oven.

I built it because a British recipe saying "gas mark 4" or a European one saying "180°C fan" leaves a US cook guessing.

The formula from NIST's Handbook 44 is °C = (°F − 32) ÷ 1.8.

A worked example

Here's the example the calculator loads: 350°F.

(350 − 32) ÷ 1.8 = 176.7°C, which recipes round to 180°C. In a fan oven, that's about 160°C, and it's gas mark 4.

The fan oven rule

A fan, or convection, oven blows the hot air around, so food cooks faster. Which? puts it at about 20°C cooler for the same result.

So if a recipe says 200°C and you have a fan oven, set 180°C. If it already says "fan", don't take off more.

Mistakes to avoid

These are the ways a bake goes wrong.

  • Taking 20°C off a recipe that already gives the fan temperature
  • Converting 180°C exactly to 356°F instead of the usual 350°F
  • Skipping the preheat, so the bake starts in a cool oven
  • Opening the door early, which drops the temperature fast
