MOV and MP4 are close cousins. Both can hold the same H.264 and HEVC video, so converting is usually just a new box around the same picture and sound.

iPhones save video as MOV. In the default High Efficiency setting, the video inside is HEVC, also called H.265, which takes about half the space of H.264.
Apple explains that Most Compatible, under Settings, Camera, Formats, records H.264 instead. That one plays everywhere.
